The encapsulation of bioactive compounds in nanoemulsions is an innovative technique that aims to improve the solubility, stability and bioavailability of substances with functional properties, such as antioxidants, antimicrobials and anti-inflammatories. Nanoemulsions, formed by droplets with sizes smaller than 200 nm , are capable of increasing the absorption of bioactive compounds by the organism and protecting these compounds from degradation during storage and processing. The challenges and perspectives for the commercialization and popularization of this technology are addressed, highlighting its potential for the development of more effective and sustainable products.
